Perfect for these chilly nights!

Easy Lasagna Soup by Melanie Knight (serves 6)

  • 1 lb ground Italian sausage
  • 1/2 tbl minced garlic
  • 1 cup diced Vidalia onion
  • 1 tsp Italian seasoning
  • ½ tsp dried basil
  • 1 tsp beef boullion
  • 6 cups water
  • 1 cup frozen spinach (optional)
  • 3 tbl tomato paste
  • 14.5 oz crushed tomatoes
  • 14.5 oz diced tomatoes
  • 1 tsp sugar
  • 4 lasagna noodles (broken into 3rds – then in half so each piece has 1 ruffled edge)
  • Salt & Pepper to taste

For assembly

  • 8 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ grated parmesan

Directions:  Brown the Italian sausage over medium heat in a large pot.  Add in the onions and garlic and cook until transparent.  Add in Italian seasoning, basil, beef bouillon, water, tomato paste, diced tomatoes, crushed tomatoes, sugar and spinach (optional).  Bring to a boil, then reduce heat and simmer for 10 mins.  Add in the broken lasagna noodles and cook another 10 mins.  Salt & Pepper to taste

Each bowl:  Put 1 spoonful of ricotta cheese on the bottom of the bowl.  Top with 1 cup lasagna soup, sprinkle with mozzarella and parmesan.  Enjoy!

Jan: BLING in the New Year

First off, Happy New Year! I hope you and your family had a wonderful Christmas and enjoyed some well-earned time off. But now what?

For me, I’m tired of all the hype around the “right” fitness plan to shred pounds or the “new” planner that will schedule out every second of your life. These sound too much like work to me AND I already have a job. PLUS, we’re only here once…I don’t want to spend time suffering on purpose.

So what do I want?  I want to savor every second of the precious life on Earth.

Interesting…what does that look like?

For me, it’s about doing more of what brings me joy.  I like having fun with food and fashion.  I like eating GOOD food and making people laugh.  I like sharing things that I’ve learned so that someone else gets a head start.  Oh…and I like waterfalls.

So what does this have to do with me?  I’m glad you asked!

I am a dangerous mix of a procrastinator and an optimist.  I put everything off to the last minute, but I am convinced that I have plenty of time!

Last week (after 2 cups of turbo charged coffee) I sketched out my writing plan for 2023 to stay on track.  I had a theme for every month complete with recipe ideas, field trips, challenges, and adventures.  I was so fired up- that I got the idea- that MAYBE there were other ladies out there who would like to go on this grand adventure with me. So I posted the offer on Instagram, TikTok & YouTube and MUCH to my surprise…people said YES!!!

2023 Shine Bright Darling Challenge!

Thanksgiving: The Prodigal Dog, Four Square Pie & Parmesan Potatoes

I have never understood the Bible story of the Prodigal Son. I have always felt that it was so unfair that
the son who followed the rules and worked hard was overlooked and not celebrated like his lame loser
brother. That all changed for me a couple of years ago.
It was the morning of Christmas Eve and I got up early, had my cup of coffee, bundled up in some warm
clothes and took a walk with my two dogs down to the creek while my family slept. We have two rescue
dogs. Colt is a gorgeous chocolate lab/ Australian shepherd mix we adopted from the Lancaster SPCA at
Walmart in 2005. Our other dog, Bugle Boy (named for his heralding barks and howls every time we
come home) is a pure bred beagle who finally trusted us enough to let us pet him after he lived in the
woods near our house for years. We think he was dumped by a hunter because he is gun shy. Our yard
is fenced in with an invisible fence so our dogs can frolic in the woods chasing squirrels and rabbits,
splash around in the shallow creek and all around enjoy their little doggie country lives within the safety
of our yard and avoiding the busy Camp Creek Road traffic.
Back to our walk. I came across what looked like a dirt landing strip on the edge of the fence line and
figured this must be where Colt (chocolate lab mix) would scratch and bark at a squirrel across the line
that he desperately wanted to chase. I looked at Colt and he raised his little doggie eye brows and I
thought – yep, he just wants to cross the line, smell around and check it out. I knelt down and took off
his collar. He immediately bolted off over the line and kept running. I started screaming his name as he
ran way-way off in a huge arc until I couldn’t see him anymore. I stood there in the cold and did not
know what to do next. Then I heard two gunshots in the distance. “Oh dear God”, I prayed, “Please
don’t tell me they mistook my brown dog for a deer and shot him!” I called more for Colt. He still didn’t
come. I screamed for him until my throat was sore. How could I be so stupid? Why did I take his collar
off? Why would a dog that had everything leave for whatever was out there? If a hunter did shoot him
by mistake, I had now ruined Christmas and had to tell my son his dog was dead because I was stupid.
I made my way back to the house. There was no way I could search in the woods on my own, so I went
to wake up my husband Tommie. To his credit, he just said “Oh my God” and started getting dressed to
come help me search for Colt before our son woke up. Tommie could have really let me have it, but he
didn’t. I think the look on my face let him know I had already beat myself up enough. Not wanting to
waste time- I went back outside and into the woods calling for Colt.
At first I thought I was hearing things, but then it got louder. I could hear a dog barking in the distance.
I listened again- not just any dog- but MY DOG. I ran to where the dirt strip was in the woods, and there
he sat on the other side wanting to come back across the line, but scared to. Tears streaming down my
face, I ran to him and sank down on my knees in the dirt and frantically hugged him. My dog was ALIVE
and he had come HOME. I didn’t care why he left or that he didn’t come to me when I called him. I
didn’t care what he went after or why he decided to leave the safety of our home. I had no desire to
punish him because all I cared about was having him safe in my arms. That’s when I finally understood
the story of the Prodigal Son and why his homecoming was a reason to celebrate- funny how God uses
simple things to teach us complex lessons. Needless to say- both dogs enjoyed some extra treats that
Christmas. I hope you have a wonderful Thanksgiving this year.

Four Square Pies by Melanie Knight, 24-32 servings- depends on your slices!
You’ve heard of three square meals…well here’s four square pies! While this took a while to mix up all
for pie ingredients, the beauty is that you only have to bake 1 time.
Ingredients
 2 boxes Pillsbury Pie Crust (4 individual pie shells)
Cherry Pie
 1- 21oz can cherry pie filling
Apple Pie
 1- 21oz apple pie filling
 ½ tsp nutmeg
 ½ tsp cinnamon
 ½ tsp allspice
 ½ tsp almond extract
Pumpkin Pie
 1- 15oz can pumpkin puree
 2 eggs lightly beaten
 1- 15oz can sweetened condensed milk
 1 tlb pumpkin pie spice
 1 tsp vanilla
Pecan Pie
 ½ cup packed brown sugar
 ¾ cup agave syrup (or brown corn syrup)
 5 tlb unsalted butter- room temperature
 3 large eggs lightly beaten
 1 tsp vanilla
 1 ½ cups chopped pecans
 ¼ tsp salt
 ¼ tsp nutmeg

Directions-Preheat oven to 425 degrees
Line the 12×18 inch pan with the pie shells. Where you have to cut the shells to fit the pan, make sure
to overlap where the shells meet by ¼ inch. Use a fork and pierce the shell to prevent it from bubbling

up. Bake for 10 mins. Remove from oven & set aside. Reserve scrap pie crusts for apple pie shell
topper and cherry pie lattice
For pie filling- mix all individual pie ingredients in a bowl.
To assemble the Four Square Pie- Visually identify where the four squares are. Start with the top left
square and fill it in with the apple pie filling. Top with a layer of pie crust and prick with a knife. Next-
on the bottom right square- fill it in with the cherry pie filling. Top with the pie crust in a lattice pattern.
Next, pour the pumpkin pie filling in the top right square. Finish with pouring the pecan pie filling in the
bottom right square.
Bake for 40-45 minutes in the oven. Remove and let stand for 10 minutes before serving. Enjoy!

Crosshatch Parmesan Potatoes by Melanie Knight serves 8
This dish combines the delicious crunch of oven baked parmesan with the comfort of an oven baked
potato. This super simple dish is surprisingly delicious.
Ingredients
 4 medium sized russet potatoes- cut in half lengthwise
 ½ cup grated parmesan
 4 tbl melted butter
 1 tsp Kinder’s The Blend seasoning

Preheat oven to 425
Line a baking pan with aluminum foil. Cut a cross hatch pattern ¼ inch into each potato. Mix parmesan,
butter and seasoning. Using a brush (or your fingers), paste the mixture into each potato crosshatch.
Place potatoes seasoned side down on the pan. Bake for 25-30 minutes. Gently peal the potatoes off
the aluminum foil so the crusted parmesan does not come off. Enjoy!

Fall Tailgating- Fiesta Edition

Why let inflation ruin your football fun?  Save your gas money and plan a home tailgating event in the comfort of your own home.  Go ahead and admit it, you’d rather be home anyway.  If you were like most Americans in 2020, you finally had time to make some home improvements, so you might as well get your money’s worth out of them!

While standard tailgating in a parking lot requires you to pack up grills, coolers and travel friendly foods, “home-gating” is much easier.  Now you can always continue with the summer favorites of burgers and hot dogs, but here’s a spicy gameplan to host your own Fiesta tailgate.

Not to brag, but I used to work at Taco Bell, so that plus 30+ years eating at Mexican restaurants kinda make me an expert on these matters.  Seriously, my kids were genuinely impressed with my taco making skills and used to tell people “my mom knows what she’s doing- she used to work at Taco Bell” and I’d nod solemnly from the kitchen.  So now you too can benefit from my hard earned knowledge.  Don’t worry, its more about simple combinations than tricky recipes.

Start with these simple ingredients: 

  • base:  taco shells (plain, Taki & ranch flavored), tostada shells, flour tortillas (burrito & soft taco size) and nacho chips. 
  • filling: taco seasoned ground beef, refried beans, black beans
  • topping:  lettuce, tomatoes, black olives, chives, chopped onions, jalapenos, shredded cheddar cheese, white quesadilla cheese, pico de gallo (already made from deli section), guacamole (already made from deli section), sour cream
  • sauce:  red enchilada sauce, green chili sauce, hot sauce, nacho cheese

 Now, you’ve got a full spread that will satisfy all your guests dietary needs.  Got a vegan in the house?  Great- they can make a bean burrito.  Got a keto dieter?  Perfect- they can make a taco salad.  Kid who only eats grilled cheese?  He’ll probably love a quesadilla   See?  Each guest can assemble their own perfect plate (you’ll have to help this kids of course).

To help them figure out how to put each dish together, you can write these simple combinations on note cards (I tweaked the names- feel free to make up your own!).  You can also leave out your food spread for guests to graze while they watch the game.  Enjoy!

  • Taco:  hard shell or small flour tortilla, beef, lettuce cheddar cheese
  • Taco Max:  hard shell or small flour tortilla, beef, lettuce cheddar cheese, sour cream, tomato
  • Nacho Grande:  nacho chips, beef, tomatoes, nacho cheese, sour cream, green onions, guacamole, jalapenos
  • Burrito:  large flour tortilla, refried beans, onion, red sauce (or green), cheese
  • Burrito Max:  large flour tortilla, refried beans, beef,  onion, red sauce (or green), cheese, sour cream, tomatoes
  • Tostada:  refried beans, red sauce, lettuce, tomato, cheese
  • Quesadilla:  large flour tortilla, quesadilla cheese (microwave 15 seconds)
  • Pico Melt:  small flour tortilla, cheddar cheese, pico de gallo (microwave 15 seconds)
  • Taco Salad:  beef, beans, lettuce, tomato, cheddar cheese, sour cream, green onions, pico de gallo, black olives, guacamole

You need a tropical escape!

For spring break this year, we went to the Outer Banks in NC.  Yes, I am a sucker for the Netflix teen drama “Outer Banks” and just had to take the trip.  It took about 6 ½ hours to get to Kitty Hawk and since we weren’t staying a whole week, I booked a room at the Hilton Garden Inn.  Since it was our first time here, in the 60’s, and apparently still the “off season”, we kinda had the place to ourselves.  My overall impression was that it was a lot like Cherry Grove in Myrtle Beach- just a hundred miles of it lol. 

For our first adventure, we did the beginner hang gliding class with Kitty Hawk Kites at Jockey’s Ridge State Park on huge 60ft sand dunes.  This is the same place Wilbur & Orville Wright took the first flight, so it was cool to be in the birthplace of aviation.  When I was a kid, hang gliding images were everywhere, but I never thought I’d get the chance to try it myself, much less on a beach trip.  The kids got way more height than the adults, but it was still fun to soar through the air, even if it was just for 10-15 seconds.

This gave me a great idea for Mother’s Day!  This year we are going to create a Tropical Escape at home.  Begin by setting the table with a bright tablecloth & fresh colorful flowers.  Next, turn on some cool tunes- we’ll play a variety of Beach Boys, Bob Marley and our local legends Sugarshine.  For attire, have everyone dress in bright colors, floral prints and flip flops.  If you can get your hands on some flower leis- that would be great too.  For the menu, keep it simple so you enjoy the day.  Both the fried rice & cupcake recipes below can be made a day ahead.  If you want a party game- break out the broomstick and introduce the kids to limbo!  Sometimes all you need to shift your mind to a happy place is good music, good food and good company.  Happy Mother’s Day! 

Our second adventure took us north to Corolla Beach in search of the wild horses.  The “tour” was a $60 per person 3 hour ride in the back of what looked like an open air cattle truck with no guarantee of seeing a horse.  We opted to rent a 4 wheel drive Jeep from Enterprise instead for a DIY tour.  In Corolla, the road ends and you have to deflate your tires to 20 psi and you can drive on the beach.  In Myrtle Beach, you can do this on special occasions, but the tickets are always sold out.  Here, you can do it every day!  People park on the beach and tailgate oceanfront!  There was even a wealthy neighborhood of three story houses on sand roads.  This was incredible and I spent way too much time trying to figure out what those people did for a living.  We did finally stumble on the wild horses just grazing between these million dollar homes- they were beautiful (the horses and the homes!)  As we were leaving, we saw two men in wetsuits kiteboarding in the waves and cutting flips in the air- yes this was some incredible x-games stuff!

Our final adventure took us to three light houses, Bodie, Currituck and Hatteras.  While light houses were not on our agenda, we saw images of them everywhere so we decided to check them out.  The only one we could climb was Currituck, the other two were closed for the season or for repairs.  These were all incredible structures.  The view from the top of Currituck was amazing, but very scary since we were 12 stories up in the air on a tiny ledge.

We also ate at several restaurants (no wait since it was still off season) and my favorite was called Mama Kwan’s Tiki Bar & Grill.  Not only was the food delicious, but it felt like home because it reminded me of my favorite restaurant- Tropical Escape.  Do you remember that place?  It was in Rock Hill on South Anderson Blvd and had the best food, a relaxed atmosphere and live music!

Tropical Chicken & Pineapple Fried Rice by Melanie Knight (serves 4- 6)

Ever since my husband got a Blackstone, we have made a ton of fried rice dishes and each one is delicious.  I incorporated pineapple into this one to give it a tropical flair.  This recipe would also be good with beef tips or shrimp.

Ingredients

  • 2 cups cooked jasmine rice
  • 2 chicken breasts – cut into ½ inch pieces
  • 1 sweet onion (medium sized) dices
  • 1/2 cup pineapple chunks (save ¼ cup can juice)
  • ½ cup green onion (for garnish)
  • 2 tbl fish sauce- near soy sauce location in store (for chicken marinade)
  • 1 tbl soy sauce (for chicken marinade)
  • 1 tbl soy sauce (for onion & pineapple marinade)
  • ¼ cup pineapple juice (from can-for chicken marinade)
  • 4 tbl olive oil ( 2 tbl for chicken, 2 tlb for vegetables)
  • Optional Condiments:  soy sauce & Yum Yum Sauce

Marinate the chicken in the fish sauce, soy sauce & pineapple juice, set aside while you chop the sweet onion & green onion.  On a griddle (of in an electric frying pan), heat 2 tbl of oil to medium high heat and cook the chicken until done- cook the marinade too as this will add flavor to the rice.  Next, heat the other 2 tlb of oil to med high heat and sautee the pineapple chunks and onion.  Cook until the onion is clear.  Next add in the rice and mix all together.  Its ok if the rice gets a little crunchy- that’s what makes it taste good!  Add the chopped green onions as garnish on top before you serve.  Enjoy!

Pina Colada Cupcakes by Melanie Knight (makes @20-24)

Growing up, my mom was known for her pineapple upside down cake.  She’d make a huge sheet cake and when she flipped it over, it would be topped with pineapple rings and cherries.  It was a colorful and delicious dessert.  These cupcakes remind me of her cake, but the addition of coconut takes you to a tropical paradise.  Seriously, if you make these, your whole house will smell like Spring Break 1988.  So kick back and play Kokomo by the Beach Boys as you save these tasty treats!

Ingredients- Cake

  • 1 pkg Duncan Hines Pineapple Supreme Cake Mix
  • 2 tsp coconut extract flavoring
  • 1 tsp rum extract flavoring
  • 1 cup water
  • 3 large eggs
  • ½ cup vegetable oil

Cream butter with coconut and rum extract in an electric mixer.  Next, slowly add the powdered sugar 1 cup at a time.  If you use a decorative frosting tip (like the picture) you’ll need to make a double batch.  If you just frost the cupcakes with a butter knife- this will be enough to do 20-24 cupcakes.  Top each cupcake with a cherry.  You can also cut the cherries in half so that you have enough.

Ingredients- Frosting

  • 1 cup unsalted butter- room temperature
  • 3 cups powdered sugar
  • 1 tsp coconut extract flavoring
  • 1 tsp run extract flavoring
  • 1 jar maraschino cherries for topping

Preheat oven to 350 degrees.  Cream oil, eggs, water, cocnut & rum extract.  Slowly add in cake mix and mix for 2 mins.  Line 2 cupcake pans with cupcake liner cups.  Fill each one to 2/3 full.  If you do this perfectly, you’ll end up with 20 cupcakes- I always end up with 20 lol.  Bake 15-18 mins and set aside to cool.  If you are in a hurry, you can put them in the fridge to cool while you make the frosting.
